We are proud to offer local organic vegan food to feed the soul here at Santosha.


Santosha is a vegan household but vegetarians and meat-eaters alike will discover a whole new way of enjoying food here. Everything is organic, and locally sourced wherever possible. You’ll feel lighter, deeply nourished, and inspired to try new ways of cooking when you return home. Simply put: it’s vegan deliciousness. There will also be locally baked bread, and depending on your schedule, it may be possible to visit a traditional bread oven just after the bread has come out of the oven. And then there are occasional best-croissant-you’ll-ever-have, baked fresh the morning they arrive. Your palate, heart, and mind will be satiated with every meal, whether we enjoy it on the outdoor patio, formal dining table, or picnic-style!

We have a veggie and fruit organic garden that we nourish with our in-house compost. Depending on the season, you could be eating organic strawberries, tomatoes, kale, broccoli, figs, plums, and fresh herbs from our garden.



Bénédicte, our main chef, is native to this region of France, and lives in Espéraza, the closest town with amenities to Santosha Yoga. She is a mother, with 3 children, two of which still live at home. Although she has not been classically trained, she is a great gourmand, and knows how to feast your taste buds!

Her passion for vegetarian food began in 1992, when she flew to the USA to meet, for the first time, her mother’s American family. In Homestead, NY, living a very simple life in a charming wooden house in the woods, she met her uncle and aunt Gayle. Gayle used to wake up at 4 o’clock in the morning to practice meditation and yoga at sunrise. They taught her the basics of organic gardening and vegetarian cooking, and they also offered her another vision of life.
Since then, Bénédicte has never stopped exploring and creating vegetarian cooking. She is now vegan since 2012.

In 2016, after almost 25 years of being a stay at home mum, cooking everything from scratch, and home schooling her children, she decided to start a catering business “Le Déjeuner sur l’Herbe” (Lunch on the grass). Gillian met Bénédicte while she was selling her organic vegan food on Espéraza market. After tasting her delicious cooking several Sundays in a row, Gillian asked her to joint the Santosha team. We are so blessed that she accepted.

At the end of June 2018 Benedicte took over La Goutine, the organic vegetarian restaurant in Limoux. Everything she cooks there is now 100% organic vegan. Santosha Yoga is proud to still have her as our permanent chef, and we sometimes take our retreat guests to dine in her restaurant.
